Cool Tropical Concoctions
Nothing beats the heat better than a cold, sweet drink (with an umbrella, of course!), so mix up one of these delicious tropical treats and chill out on an imaginary beach in Puerto Rico.
COCO-PIÑA BATADA
For Two
8-oz. container of coconut yogurt
2 T. flaked coconut
Frozen banana, chopped
6-oz. pineapple chunks in juice
In a blender, combine yogurt, pineapple, coconut and banana until smooth. Pour in a frosted glass, garnish with a cherry and paper umbrella and serve poolside.
EL YUNQUE PONCHE
Serves 12
5 cups mango-orange or passion fruit-orange juice
1 cup unsweetened pineapple juice
1 c. lemon-lime soda
1/2 c. fresh lime juice
1/4 c. confectioners’ sugar
2 T. plus 2 tsp. grenadine syrup
Mix all ingredients in a large punch bowl. In a tube cake pan, freeze an ice ring studded with maraschino cherries and lime slices and add to the punch bowl just before serving.
PARCHA PASSION
For Two
Parcha (passion fruit) juice
½ oz. lime or lemon juice
Freeze the parcha juice in an ice tray for at least 3 hours. Remove the juice cubes and place in a blender with the lime or lemon juice. Process quickly and serve.
